This blog is intended to be a roundtable for chefs to sound off and tell their side. Not so much the food or how you thicken your demi-glace with powdered Mayan artifacts. There are 18 million blogs for that. This should be about the apron stains and the stories behinds them, particularly the ones that involve blood. The smartest people in the building are more than probably the men and women in the kitchen getting you 20% for doing next to nothing.
